This release marks the distillery's continued growth, as they produce only a handful of casks annually. Like the first release, this whisky is finished in an ex-Banyuls cask—a French appellation d'origine contrôlée from the Roussillon region.

Production Details

This whisky matured for 4 years in first fill bourbon casks before finishing in the ex-Banyuls wine cask. At 51.2% ABV and 700 ml, it delivers refined balance and character. The increased age and strength compared to the first release demonstrate the distillery's evolving craftsmanship and consistency.

Tasting Profile

The nose opens with Muscovado sugar, honey, and spice, complemented by sandalwood and delicate pine needle notes. The palate reveals soft white pepper, subtle mint, honey, and herbal elements with walnuts and coffee beans.
