This is whisky from a closed chapter. Dumbarton distillery shut in 2002, and remaining casks are now carefully released by The Whisky Barrel under the Unicorn Series—a tribute to the legendary "Scotch Watch" geese that guarded the bonded warehouses from 1959 to 2012. This 25-year-old from 2000 is a rare window into Dumbarton's past as one of Europe's largest grain distilleries, built in 1938 by Hiram Walker as a powerhouse for blending stock.

Matured in a first-fill Oloroso sherry hogshead, this bottling (just 259 bottles, cask strength at 56.6% ABV) carries a quarter-century's worth of American oak depth, then enriched by Spanish sherry influence. The result is thick and sweet: raisin syrup, dark chocolate, and treacle on the nose, followed by a full palate where PX-soaked wine notes and woody spice interweave with the creamy, supple grain spirit underneath.
