About
Tobermory, founded in 1798 on the Scottish Isle of Mull as Ledaig distillery (meaning 'safe haven' in Gaelic), produces this 21-year-old single malt via an unconventional path: 11 years in ex-bourbon cask, followed by 10 years in Manzanilla sherry cask. The result is a whisky with pronounced character—savoury and salt-driven, full-bodied but not in the mould of classic sherry expressions. The nose reveals citrus and sea salt, with gingerbread and dark chocolate. The palate is notably dry: sweet orange and white grape, clove oil, and lingering maritime notes. The finish is long and complex—romano cheese, raisins, peppercorn, and a persistent salinity that defines the Manzanilla influence. This is not a smooth, refined sherry whisky. It is instead a spirit that wears its island provenance and unusual cask journey openly—salty, spiced, with a mineral edge that feels far more characterful than the typical sherry-cask finish.
