Cask Islay is a non-age-statement single malt from Islay, deliberately unnamed on the label—a choice that shifts focus to the cask and character itself. Matured in bourbon casks and produced in small batches of 5–10 casks at a time, it is lightly peated (around 35 ppm) and bottled at 45.9% ABV for drinkability. Nose and palate converge on a smoky, salty profile: wood smoke, pepper, salted caramel, nuts, and citrus notes breaking through the haze. The palate is oily and full-bodied, with ashy peat, green herbs, honey, and stone fruit—though some detect a light bitter edge. The finish is smoky and dry, with a lingering peppery bite.
