The Stillery Amsterdam marked 750 years of the city's history with this commemorative whisky—a playful yet fitting way to celebrate a milestone. The distillery, founded in 2009 by Pascal Peeters, established itself as a pioneer of craft spirits in the Netherlands. This Jubileum Edition was enthusiastically received during its soft launch at The Art Of Drinks. The whisky is finished in Pedro Ximenez sherry casks, delivering a rich, fruity foundation. On the nose, ripe apricot, light peat, and raisin emerge, with honey as a closing note. The palate is fruity and present, combining sherry influence with subtle smokiness. This is a whisky that speaks to more than taste alone—it captures a moment in Amsterdam's history, bottled as craft and celebration.
