Waterford's Single Farm Origin series places terroir at the heart of Irish whisky. This Ballymorgan 1.1 was made from 100% Overture barley grown on Robert Milne's farm in County Wexford — a deliberate choice to capture the character of a single place and single harvest. Founder Mark Reynier brings two decades of experience from wine and spirits; his vision is that Irish whisky can speak about where it comes from, just as wine does. The whisky matured in a blend of first-fill American oak, European new oak, French oak, and Vin Doux Naturel casks — an intentionally diverse cask strategy that balances red wine qualities with fruitiness. Bottled at 50% ABV as a limited edition in 2020. In the glass, a lively, youthful spirit emerges. The nose brings malty bread, toasted notes, and bright fruit together — mirabelles, lemon zest, red apple — with hints of grapefruit in the background. The palate is hot and sweet, with fresh berries, dried currants, flowers, and a dry woody finish that brings leather and pepper. This is not a polished, settled whisky. It is a young, active dram that shifts constantly in the glass — a moment of terroir and harvest, not time.
