W.D. O'Connell is a young whisky merchant house founded in 2019 by Daithí O'Connell in County Waterford, Ireland. This Small Batch release signals an ambitious vision: young Irish malt finished in Amontillado casks, a choice that honours the storied tradition of sherry winemaking while bringing that complexity into the glass in just five years. Distilled in 2018, the spirit began its life in ex-bourbon casks before being transferred to Amontillado wood. That sherry influence is unmistakable—notes of nutmeg, dried fruit, and a gentle spice create a layered flavour profile that belies its youth. On the palate, a creamy texture unfolds with vanilla and honey emerging gradually. The finish builds warmly without the harshness typical of young whisky.
