About

Glendalough was founded in 2011 by Barry Gallagher and Brian Fagan in the Wicklow Mountains, south of Dublin. The name means 'valley of the two lakes' in Gaelic—a region steeped in distilling heritage. This Pot Still Irish Whiskey is first matured in ex-bourbon casks, then finished in virgin Irish oak, a rare and ambitious choice that shapes its character. Pot Still is distinctly Irish: triple-distilled from a mix of malted and unmalted barley, yielding a grain-forward spirit with a signature spicy edge. The virgin oak adds structure and tannin without overwhelming the delicate balance. On the nose, green apple, banana, and citrus emerge alongside raw malt and cereal notes. The palate is oily and peppery—cinnamon, ginger, and clove lead, with honey and vanilla in support. The finish is medium and dry, with lingering spice and a tannic grip from the young wood.
