Highland Park's 'Between You and I' is a singular collaboration between the Orkney distillery and three-Michelin-starred chef Björn Frantzén. This 17-year-old single malt was created as a travel-retail exclusive, marking a first in Highland Park's history — a conversation between Scottish whisky tradition and Scandinavian culinary thinking. The cask composition is unconventional: the spirit matured first in virgin Swedish oak, which imparts a distinctive nutty spiciness, then in ex-bourbon and sherry-seasoned oak. This layered approach builds complexity and depth beyond the distillery's standard house style. On the nose, nutty spice and orchard fruit emerge, with subtle maritime notes in the background. The palate unfolds with jammy depth, dark chocolate, and golden syrup — the Orkney character (gentle peat, sea air) remains present but yields to the rich fruitiness shaped by the unconventional oak regimen.
