Head Distiller Scott Ferguson hand-selected the cask for this inaugural release in Eden Mill's new single cask series. Distiller's Cask Release #1 pairs lightly peated malt with an Italian Amarone red wine cask — a genuinely rare pairing. Of all the casks filled at the original distillery, only about 5% held peated spirit, and just two of those went into Amarone wood. This is one of Guardbridge's most exclusive bottlings. The spirit is 100% peated malted barley, peat sourced from St Fergus in Aberdeenshire at 20–30 PPM phenol. The Amarone cask brings depth and structure: black cherry and dark chocolate layer over floral smoke. Ferguson describes the light smoke as evoking summer beach bonfires in St Andrews — accessible peated whisky without compromise. On the nose: velvety fig, maritime brine, leather and cigar tobacco. The palate unfolds full-bodied, with those dark fruit and chocolate notes building. The finish is long and lingering, the complexity revealing itself slowly.
