Cù Bòcan Creation #8 is a pioneering peated single malt from the Scottish Highlands, marking the first time a peated Scotch has been matured in Canadian ice wine casks. This experimental release from Tomatin Distillery marries 18-year-old spirit aged in ice wine casks from family-owned winery Pillitteri with 16-year-old spirit finished in Spanish Verdejo casks sourced from winery Belondrade. Ice wine—made from grapes frozen on the vine and pressed at –7°C—delivers intensely concentrated sweetness, while Verdejo, a crisp white wine from Spain's Rueda region, contributes fresh citrus and herbal character. The dual-cask approach is deliberately experimental: the Verdejo casks were filled just weeks after emptying, creating a vibrant, non-chill-filtered expression. This is the oldest release to date in the Creations series, an annual collection of limited editions celebrating Tomatin's lightly-peated spirit tradition from over a century ago. On the palate, Creation #8 unfolds as a conversation between sweet and smoke: apricot jam, candied peach, and pineapple syrup from the ice wine interweave with citrus, grass, and soft oak spice. Light peat smoke threads throughout without overpowering, creating an intriguing dram that redefines what peated Scotch can be.
