Cù Bòcan has built its reputation on experimental Highland maturation, pushing whisky's boundaries through unconventional cask partnerships. Creation #8 marks a first: the inaugural peated single malt matured in Canadian ice wine casks. This limited-edition release pairs gently peated Speyside spirit with the concentrated sweetness and complexity of ice wine—a pairing that amplifies rather than masks either character. The ice wine casks originate from Pillitteri, a family-owned Canadian winery where harsh winters produce rich, honeyed ice wine. Cù Bòcan further finished the spirit in Spanish Verdejo white wine casks, introducing a dual wine-cask maturation that softens the smoke without erasing it. On the nose, baked apples, poached pears, apricot jam and candied citrus peel emerge, woven through with gentle smoke and orange blossom. The palate is silky and sweet—honeycomb, peach, nectarine, marmalade—before lime zest and earthy smoke take the finish. This is not a compromise between two flavours; it is their conversation.
