Dingle Distillery was founded in 2012 by Oliver Hughes, a former barrister determined to restore Irish whiskey's spirit. Located on the edge of Dingle Bay in County Kerry, the distillery marries craft tradition with unconventional thinking. While waiting for whiskey to mature, Hughes created their now-celebrated gin — a testament to patience and experimentation. This blended Irish whiskey displays the characteristic fruit-forward sweetness of Irish distilling. The nose reveals citrus, pear, and honey, followed by subtle dried-fruit notes. The palate brings honey and caramel forward, with light malty character and good structure. The finish is clean and dry, with satisfying length. Dingle is known for bottling without chill-filtration and in natural colour — no shortcuts. This is whiskey for those who value craft over marketing.
