Kilchoman was founded in 2005 by Anthony Wills on Islay's west coast—the first new distillery built on the island in over 120 years. This Calvados Single Cask Finish exemplifies Wills' willingness to experiment beyond convention. Matured for more than six years in ex-bourbon casks, the spirit was then finished in a Calvados cask, introducing orchard fruit character that plays against Islay's signature peat smoke. The pairing of Calvados oak and Islay malt is unconventional, but it works. Apple notes—both green and ripe—emerge clearly without drowning the underlying smoke. On the palate, the whisky feels bold and structured, with honey and toffee threading through a mild, ashy smoke. The finish is long and layered, the fruit from the Calvados cask persisting to the end.
