About
Anthony Wills founded Kilchoman in 2005 on Islay's west coast at a time when few believed in new single malt production on the island. For the distillery's 20th anniversary in 2025, Wills hand-selected twenty casks spanning twenty years of craft: four vattings of five casks each, aged 14–18 years. This bottling is one of them — a vatting of five ex-Oloroso sherry butts, matured 15 years and bottled at 52.7%. Sherry maturation brings intense, dark aromas: red-fruit jam (blackberries, blueberries), candied blood orange, and beneath them the characteristic Islay smoke. On the palate, sweet sherry fruit and peppery spice meet a salty, savoury peat that reflects the island's maritime edge. The finish stays dry and assertive. This is not a polished, rounded sherry whisky — it is Islay whisky that happens to have been matured in sherry, not the other way around. A dram that speaks to Kilchoman's scale and confidence after two decades.
