Kilchoman was established in 2005 by Anthony Wills on Islay's west coast, following a twenty-year career in the drinks industry. This 2006 from the 20th Anniversary Cask Series is one of only twenty hand-selected casks chosen by Wills and his team to mark two decades of craft and perseverance. The cask represents not just maturity—eighteen years in ex-bourbon—but also the independent spirit of a farm distillery committed to complete 'barley to bottle' control. The ex-bourbon maturation has shaped this whisky's characteristic Kilchoman profile: light and elegant, without the weight of heavy peat. The nose reveals citrus and orchard fruit, supported by sweet caramel and subtle smoke. On the palate, that lightness persists—baked apple, spiced biscuit, and salted caramel—while the peat remains refined rather than forceful. The finish is long and moderately dry, with a lingering smoky note. This is Kilchoman at its most mature: no spectacle, but a sustained, well-balanced dram that justifies twenty years of patience.
