Wolfburn was founded in 1821 by William Smith on the outskirts of Thurso, taking its name from the burn—the Scots word for stream—that supplied its water. After lying dormant for over a century, the distillery reopened in 2013 under new ownership, re-establishing itself as one of Scotland's most northerly single malt producers. This Anniversary Series bottling from 2015 marks the distillery's modern revival. Matured in a second-fill Oloroso sherry butt, this whisky developed a dense, dark sweetness characteristic of the cask. Bottled at cask strength (54.80% ABV) without reduction, it retains the full intensity of spirit and oak interaction. The nose opens with fresh butter, citrus peel, and cereal notes, layered with hay and grain. On the palate, dried fruit, nuts, and brown sugar emerge, supported by warming Oloroso character. The finish is peppery and dry, with satisfying length.
