Zuidam Distillers was founded in 1975 by Fred van Zuidam in the Netherlands, initially focused on liqueurs and genever. Whisky production only began in 1996—a relative newcomer in a traditionally Scottish landscape. Millstone Peated Pedro Ximénez demonstrates how Dutch craftsmanship holds its own: lightly peated malt, matured in first and second fill Pedro Ximénez casks, creates an unexpected harmony between Dutch refinement and Spanish richness. The pairing of peat and sherry is thoughtful. The light smoke from the peat doesn't dominate but dances around the sweet, fruity core that the Pedro Ximénez casks deliver. Raisins, damson plums, and dark chocolate form the heart, while salt and smoked malt sharpen the edges. In the glass, a whisky unfolds that doesn't attempt to mimic Scotland, but charts its own course. Sweet and spiced, with a soft, oily texture and a finish where smoke and tannins gradually fade. This is Dutch craftsmanship that needs no apology.
