Pearse Lyons Distillery was born from Dr. Thomas Pearse Lyons's personal passion for whiskey-making. After building success in America, he returned to his Irish roots and opened the distillery in 2017 inside a deconsecrated church, St. James' in Dublin — a choice that merges craft heritage with symbolic renewal. This 7-year-old blend marries grain and malt whiskeys, predominantly aged in ex-bourbon casks with a smaller portion finished in sherry wood. That combination delivers balance: bourbon contributes vanilla and sweetness, while sherry cask maturation adds depth and subtle complexity. On the nose, citrus (orange zest, lemon) and dried fruit emerge alongside almond paste. The palate is creamy and velvety, with caramel, honey, and light oak, interspersed with papaya and raspberry notes. The finish is short but pleasant, leaving behind a surprising chocolate note that lingers briefly.
