Navigator draws its name from Hobart's historic waterfront and the very origins of Sullivans Cove itself—a whisky shaped by place and the distillery's founding vision of spirits that sit naturally alongside food. This limited 16-year-old expression embodies that philosophy: patient, unrushed, and crafted from Tasmanian ingredients. Matured in American oak ex-bourbon and refill casks, Navigator delivers the rich, oily texture Sullivans Cove has built its reputation on. Bottled at 47.2% ABV, only 1372 bottles were released, making this a rare glimpse into Australian single malt craft at its peak. On the nose, bright lemon and orange emerge first, followed by layers of vanilla cream and buttery shortbread. The palate shows walnut, honey, and candied sweetness, while the finish is clean and drying, with subtle oak and coffee notes that linger without dominating.
