The Heart Cut #23 is a singular collaboration between independent bottler The Heart Cut and Boann Distillery, a family-run producer in Ireland's Boyne Valley. The distillery takes its name from Boann, the mythological goddess of the River Boyne—a nod to Irish legend that infuses the spirit itself. This is Single Pot Still Irish whiskey, a traditional style that nearly vanished from production. This #23 spent its entire maturation in a Moscatel de Setúbal cask from Portugal, an unconventional choice that gives the whiskey bold, distinctive character. The mash bill weaves together 40% malted barley with 55% unmalted barley, 3.75% oats, and 1.25% rye—a composition that retrieves the historical DNA of Irish whiskey. Only 392 bottles were released. On the nose: brown sugar, chocolate, and toffee, with an aromatic intensity that draws you in. The palate delivers red berries, honeyed sweetness, and warm pastry spice—cinnamon and ginger biscuit notes. Wood tannins add structure; the finish carries a lingering camphor and spice. This is a whiskey that rewards attention and patience.
