About
Holyrood Noir is an experimental single malt from the Lowlands, crafted with French influence and distinctive yeast strains that define its character. At 47.4% ABV, this whisky delivers a smooth, well-rounded experience with surprising depth. The nose reveals subtle notes of sawdust, hay, and brioche with a buttery character, while the palate unfolds with vibrant red fruit—raspberry jam, cherry, strawberry, and blackcurrant—balanced by toffee and fudge. The finish is remarkably clean and lingering, reminiscent of a patisserie with hints of Tarte Tatin and honeyed sweetness, creating a harmonious blend of sweet and savory elements.
