Keeper's Heart American Pot Still represents an ambitious American reimagining of Irish pot still whiskey, crafted under the guidance of Brian Nation, former master distiller at Midleton. This inaugural fully self-distilled expression from O'Shaughnessy Distilling Company honours the family's Irish-American heritage through triple distillation and a traditional mashbill of malted and unmalted barley, matured entirely in virgin American oak casks. The nose reveals a compelling interplay of new oak influence with underlying maltiness: honey, vanilla, crème caramel and toffee create an inviting foundation, layered with cinnamon, allspice and subtle resinous notes. The palate delivers a thick, oily mouthfeel with toasted oak, abundant caramel and rye bread, punctuated by fennel seeds and hints of apricot. The finish is short to medium, with lingering oak char and warming spices that fade gracefully.
