Breath of the Highlands 2007 is a refined Highland single malt bottled by independent bottler Adelphi at 12 years of age and 52.7% ABV. Matured in refill European oak casks with a Pedro Ximénez sherry butt finish, this whisky delivers full character and complexity. The nose reveals pleasant coffee and walnut cake aromas alongside dried fruits, clove, and candied orange notes. The palate shows sticky toffee, honey, and malt with a light, elegant balance that showcases the whisky's restrained yet characterful nature. A hint of heathery smoke and the long, warming finish with lingering dried fruit notes complete this well-crafted dram.
