The GlenAllachie 1990 35 Year Old Cask Strength is a masterpiece of patience and craftsmanship, created by legendary Master Blender Billy Walker. This Speyside Single Malt has matured for 35 years across four exceptional cask types: Mizunara virgin oak, American virgin oak, Oloroso sherry, and Pedro Ximénez sherry. The result is a complex and harmonious whisky that represents the pinnacle of Walker's five decades of expertise in cask selection and blending. On the nose, mocha, crystallised cinnamon and treacle tart evolve into cocoa, toasted hazelnuts, pineapple, ginger and heather honey. The palate delivers cocoa, baking spices and chocolate-coated raisins, complemented by coconut, brandied orchard fruits, sandalwood, vanilla, dried red fruits and honeycomb. The whisky's character is defined by the delicate influence of Mizunara oak, the elusive Japanese timber that imparts subtle notes of coconut, pineapple and sandalwood alongside the richness of aged sherried oak. Bottled at cask strength (50.2% ABV), non-chill filtered and free from added colouring, this whisky offers an experience as close as it gets to sampling straight from the cask.
