Bottled at cask strength with no chill filtration, this limited release showcases distillery owner Billy Walker's mastery of sherry maturation and his pioneering use of rare Scottish oak—a bold statement of terroir and craftsmanship. The nose reveals waves of salted butter, cola syrup and dried fruits, layered with vanilla sweetness, honeycomb richness and mocha depth. On the palate, heather honey, bright citrus and warm baking spices emerge, followed by gingersnaps and poached orchard fruits with gentle peppery notes. The finish is long and complex, with dark chocolate undertones and lingering spiced warmth that showcases the harmony between virgin oak's bold character and sherry's familiar indulgence.
