The Daisen is a Japanese blended whisky from Matsui Shuzo, named after Mount Daisen in Tottori Prefecture. This expression stands apart through its finishing in Japanese red wine casks sourced from the same region — a choice that fundamentally shapes its character.
The blend of malt and grain first matures for over three years in bourbon barrels, followed by careful blending. It then finishes for over three months in red wine casks from Tottori. These are not generic wine vessels but casks made for Japanese wine production, bringing a specific fruitiness and sweetness. The spirit is non-chill-filtered and retains its natural colour.
