Kilchoman is the first new distillery built on Islay in over a century, established on Rockside Farm by Anthony Wills. The PX Sherry Cask Matured is an annual release matured entirely in Pedro Ximénez casks—an ambitious commitment to let the heavy, dark sherry speak on its own terms. The 2023 edition draws from 61 PX butts, selected for their rich, complex character. The peated Islay malt (50ppm) holds its ground against the intense fruitiness of the PX sherry. The result is a whisky in constant dialogue: prunes and sultanas on the nose, dark berries and caramel on the palate, finishing with smoke and spice. The coastal peat refuses to be overshadowed by the sherry's weight. This is not a whisky that aims to be smooth or refined. The PX dominates, yet the Islay character refuses to fade. For drinkers who appreciate both elements—and the tension between them—this is a compelling choice.
