GlenAllachie was built in 1967 as William Delmé-Evans' fourth distillery design, yet spent decades in obscurity. That changed in 2017 when Billy Walker—a legendary whiskymaker with over fifty years in the trade—acquired the distillery alongside partners Trisha Savage and Graham Stevenson. Now nestled at the foot of Ben Rinnes, Walker immediately demonstrated what this Speyside producer could achieve. The 12 Years exemplifies his philosophy: a blend of Pedro Ximénez (50%), Oloroso (30%), and virgin oak (20%), all first-fill casks. This cask regime delivers a dark amber colour and a full, sherried character unusually rich for a 12-year-old. The nose reveals intense dry fruit, sultanas and vanilla layered with heather honey and cinnamon. The palate unfolds with honey, macerated cherry liqueur sweetness, nutmeg and cocoa tannins. The finish remains dry and complex, with dark chocolate and a lingering bitter edge that holds the whole composition together.
