Whisky Grilled Pork Loin with Apple Salsa

A juicy grilled pork loin marinated in a rich whisky marinade, served with fresh apple salsa. The Irish whisky adds depth and sweetness to the dish, creating perfect balance.

    In a bowl, mix Irish whisky, honey, mustard, garlic, olive oil, salt, and pepper. Place the pork loin in a large resealable bag and pour the marinade over it. Marinate in the refrigerator for at least 2 hours.

    Meanwhile, prepare the apple salsa by combining diced apples, chopped red onion, jalapeño, cilantro, lime juice, and a pinch of salt and pepper in a bowl. Set aside.

    Preheat the grill to medium-high. Remove the pork loin from the marinade and grill for about 6-8 minutes on each side, or until the internal temperature reaches 145°F (63°C).

    Let the pork loin rest for 5 minutes before slicing. Serve with the apple salsa.
