   Step 1: Combine the apple juice, water, cinnamon sticks, cloves, star anise, and orange peel in a saucepan.

   Step 2: Heat the mixture over medium heat until it starts to simmer, about 10-15 minutes.

   Step 3: Strain out the spices and orange peel from the liquid.

   Step 4: Add the honey and stir until fully dissolved.

   Step 5: Remove the pan from heat and add the bourbon.

   Step 6: Pour the drink into Glencairn glasses and garnish with an apple slice and a cinnamon stick.
