   Step 1: Make the ginger syrup by mixing fresh ginger, sugar, and water, simmer until thick, then strain.

   Step 2: Add Scotch whisky, ginger syrup, honey, and lemon juice into a shaker.

   Step 3: Add ice to the shaker and shake vigorously for about 10 seconds.

   Step 4: Strain the cocktail into a Glencairn glass filled with fresh ice.

   Step 5: Garnish with a lemon slice and a piece of candied ginger.
