Waterford Distillery is located in the picturesque city of Waterford, Ireland, and was founded in 2015 by Mark Reynier. Although it has gained a reputation for innovation, Waterford Distillery announced its closure in 2024, marking a brief but impactful chapter in the world of whisky production. With an annual production capacity of 1,000,000 liters, Waterford utilizes an 8-ton mashtun for its mashing process. The distillery is dedicated to showcasing the terroir of its grains, sourcing barley exclusively from individual farms, which is a core part of its philosophy. The whisky produced here exhibits a complex flavor profile, characterized by notes of fruit, herbs, sweet malt, and chocolate on the nose, while the palate reveals spices, fruit, and a hint of citrus, culminating in a sweet, oak-finished experience.
