Kavalan Distillery, located in the Yilan region of north-eastern Taiwan, is one of the most remarkable success stories in modern whisky history. Construction began in April 2005, and just nine months later the first spirit flowed from the stills. Named after the indigenous Kavalan people who once inhabited the Yilan plain, the distillery has grown from a bold experiment into one of the top ten largest single malt distilleries in the world, with an annual production capacity of nine million litres. Kavalan uses a double distillation method, with stills working in pairs — the first distillation separating alcohol from the wash, the second refining the spirit to the desired character. The subtropical climate of Taiwan plays a defining role in maturation: the intense heat accelerates interaction between spirit and oak, resulting in remarkably rich and complex whiskies in a fraction of the time required in cooler climates. This unique terroir has become Kavalan's signature. Kavalan has earned widespread international recognition, winning prestigious awards at competitions around the world and helping to put Asian whisky firmly on the global map. The distillery welcomes visitors and is home to the first Kavalan Whisky Bar in Taiwan, where guests can taste whisky directly from the cask.
