Highland

Highland Distillery, located in the heart of the Scottish Highlands, was established in 1827 by Daniel MacTaggart & Co. This distillery, which played a significant role in the early whisky industry, remained operational until its closure in 1852. Despite its short lifespan, Highland Distillery contributed to the rich tapestry of Scotch whisky history and is remembered for its unique expressions and production methods. With a modest production capacity, Highland Distillery was known for its traditional methods, utilizing copper pot stills and aging its spirits in sherry casks. The resulting whisky featured a complex character with a nose that evokes fruit, cherry, and sherry. On the palate, it presented a delightful combination of fruit, peat smoke, melon, and peach, culminating in a finish that offered herbal notes, malt, and sweetness, with hints of coffee. Notable expressions, such as the Dalmore 12 Years and Highland's own 8 and 10-year offerings, showcase the diverse and intriguing flavors that this distillery was capable of producing.
