Ailsa Bay distillery, located in the Lowland region of Scotland, was established in 2007 and is owned by Wm. Grant & Sons. Situated near the site of the former Ladyburn distillery, which was closed in 1975, Ailsa Bay benefits from the existing infrastructure of the nearby Girvan Grain Whisky Distillery. This strategic location allows for efficient production of both grain and malt whiskies, supporting the blended whisky market. The distillery has a significant production capacity, utilizing state-of-the-art equipment that includes traditional pot stills. Ailsa Bay is known for its unique flavour profile, characterized by sweet notes complemented by oak, peat smoke, and citrus on the nose. The palate reveals a blend of sweet elements, nuts, fruits, and spices, leading to a finish that showcases oak and persistent peat smoke, along with hints of sweetness and spice. Notable expressions include the Ailsa Bay - Sweet Smoke and the Ailsa Bay Release 1.2, both of which highlight the distillery's commitment to quality and innovation in whisky production.
