Eimverk Distillery is Iceland's only whisky distillery, founded in 2009 near Reykjavik. The venture began in the early 2010s with the release of Vor gin before the team turned its focus to whisky production. Led by founder and CEO Halli Thorkelsson, the distillery has grown into one of the most distinctive craft spirits producers in the Nordic region. Eimverk is best known for its Flóki single malt whisky, which bills itself as Iceland's first single malt made from local barley. The distillery's portfolio has expanded steadily over the years, and what truly sets it apart is its use of sheep dung to smoke barley — a uniquely Icelandic alternative to traditional peat. This unconventional technique gives Flóki expressions a remarkable and unmistakable character that reflects the raw, rugged terroir of Iceland. Eimverk's sheep dung-smoked whisky has attracted international attention, drawing comparisons to peated Scotch while standing firmly in a category of its own.
